How To Cook Yakhni

Kashmiri Yakhni Recipe (Milk Chicken Curry)

Ingredients:

  • Chicken 1
  • Milk 2 liters*
  • Water 2 glass
  • Fennel half cup
  • Black pepper 5 to 10
  • Garlic 4 to 5 pieces
  • Dry ginger powder  one tablespoon
  • Salt 3 tablespoon
  • Oil one small bowl 
  • Rice half cup
  • Onion 1
  • Mixed spices one and half table spoon

Recipe:

  • First of all take half cup rice and soak them in water for one hour.
  • Take a pan with 2 glasses of water in it and put it on stove on low heat.
  • Take grinder and put fennel ,1 spoon of salt, black pepper, garlic, dry ginger powder and grind them all.
  • Then put this paste in hot water in pan and let it boil.
  • When it boils put chicken in it and let the chicken ripen.
  • In next step take one onion cut it in a pan.
  • Put little bit oil in the pan and let it fry till the onions become brown.
  • Then take out fried onions and put in grinder along with soaked rice with a glass of water and grind it.
  • On other side separate chicken and chicken soup from all other substances.
  • Take a separate pan with oil and put all the chicken in it for frying.
  • When it becomes brown add milk in it.
  • When milk boils add soup, onion rice paste, and mixed spices.
  • Cook this whole yakhni mixture for 10 to 15 minutes.

 Your tasty yakhni is ready to serve.

How To Cook Zarda (Sweet Rice)

Ingredients:
  • Rice 2 cups 
  • Food color 
  • Water 1 jug
  • Oil 5 to 10 tablespoons
  • Sugar 1 cup
  • Almonds 5-6
  • Dry Coconut 5 to 6 pieces
  • Cashew nuts 5 to 6 pieces
  • Cardamoms 2 
  • Milk 1 cup

 Recipe:

  1. Take a pan add one jug of water in it and put the pan on stove on medium heat. 
  2.  Take one cup of washed rice and put them in pan having boiling water.
  3. Add little bit food color in water and let rice cook 70% not full.
  4. When rice has cooked to the said percentage, sieve them.
  5. Then take another pan add oil in it.
  6. Add almonds dry, coconut pieces, cashew nut, cardamom, sugar and milk in oil.
  7. Let sugar melt then add sieved rice, mix them well.
  8. Let them cook on low heat for 10 to 15 minute.
Your tasty sweet rice is ready to serve.

Today i am going to share a recipe of kheer which is perfect for infants .
Ingredients: 
  • Olive oil 3 to 4 table spoons.
  • Sojhi (semolina) 1 cup
  • Sugar 2 to 3 table spoons.
  • Water half cup
  • Milk 2 cups
Procedure:
  1. Take a pan and add olive oil in it.
  2. Keep the pan on stove on low heat.
  3. Add sojhi (semolina) and sugar in it.Keep shaking  the mixture.
  4. When you feel mixture has become brown add the half cup of water in it.
  5. When water is absorbed in sujhi, add milk in pan.
  6. Cook it on low heat  for 5 to 10 minutes. 
  7. When cooled down feed your baby.

Recipe of Kidney Beans (Rajma or Lobia)

Today i am going to share with you a new method of cooking  Rajma/Lobia dal (kidney beans).

Ingredients 
  • Lobia (kidney beans) 2 cups.
  • Oil 2 3 table spoons 
  • Onions 3 small size
  • Ginger 1 table spoon
  • Garlic 1 table spoon
  • Salt 2 to 3 table spoons
  • Red chilly 2 table spoons
  • Turmeric 1 table spoon
  • Tomatoes 5 to 6
  • Green chilies 2 to 3 
Method:
  1. Take kidney beans wash them and put them in pressure cooker along with one jug of water.
  2. Cut 1 onion and put in the beans.
  3. Add 2 spoons of salt and 1 spoon of red chilly along with 1 spoon of garlic and ginger paste each.
  4. When it boil close its lid air light.
  5. When you feel beans have ripened, open the lid and let it cool down.
  6. When it has cooled down grind the beans.
  7. Add oil in a big boiler and keep it on the stove.
  8. Cut 2 onions and put in the oil and cook till they get brown.
  9. Grind 5 to 6 tomatoes in grinder.
  10. When onions become brown add tomato paste and 2 table spoons of salt, 1 table spoon of red chilly and 1 table spoon of turmeric.
  11. Cook this paste for 5 minutes add one glass of water when it leaves smell of turmeric add paste of kidney beans which you ground before.
  12. Cook it on low heat till it boils well.
  13. Then add 2 to 3 green chilies and again cook it for 5 to 10 minutes...
